The three most common expressions (or famous last words), in aviation  are:

 

“Why is it doing that?”

As  the test pilot climbs out of the experimental aircraft, having torn off  the wings and tail in the crash landing, the crash truck arrives; the rescuer sees a bloodied pilot and asks,

“What happened?”

The pilot’s reply: “I don’t know, I just got here myself!”

Love 'em. Those are priceless quotes.
Many of these are giving me flashbacks and giggles., Aint nothin' like experience to let you know what's real.
A few more that come to mind:

   "The worst thing that can happen to an air traffic controller is falling out of his chair."

     "Forgiveness is easier to obtain than permission."

     This one has been attributed to many sources, but the original author was a pilot:

     "Aviation can be defined as hours and hours of utter boredom punctuated by brief moments of sheer terror."

     "There are no Atheists in foxholes."

     "One good man with ten grenades and one rifle can do more damage in less time than ten men with one grenade and ten rifles."

     "A good sniper can keep an entire division busy for days."

     Finally, my personal favorite:   

     "Don't volunteer for anything, until you're ordered to do so."
